How to do farofias (portuguese snowball recipe)

This time, I bring you a Portuguese dessert, not a soup. But having both together is not such a bad idea :).
This is known as a very typical portuguese dessert, because of the eggs, the use of cinnamon (the influence from the spices and Indian products) and the fact that probably no one is able to find out its origin. However I found out that there are a lot of recipes of similar snowballs in a lot of countries... well until now I didn't found out of Portugal any like this one.
Also in Portugal we have different ways of doing it - with more things, like fruits, for instance.
As for me I love this ones, just the simple thing... it always works and since it doesn't has much sugar it becomes more healthy.
How to do
INGREDIENTS:
- eggs, very fresh
- sugar
- milk
- cinnamon
- flour
- 2 pieces of lemon peel
Star by separating the white from the yellow part of the eggs. Now you can put the milk in a large saucepan with a bit of sugar and 2 pieces of lemon peel. Let it get hot but not to boil.
Meanwhile, in a large bowl whip the egg whites until you see them very stiff. Add 50 gr. of sugar and whip just a bit. If the milk is already hot then you can start cooking the egg foam.
Using a soup spoon take pieces of the foam and put it in the milk, it will float so after a 1 min (more or less) you turn it. The cooked ones you reserve in a deep plate in order to get them a bit more dry. Once the milk in it drips(1) you can put them in bigger deep plate. this part is done for now.
Now we return to the milk in the saucepan... you add the milk from the plate (that 1) to the one in the saucepan, you mix the yellow egg and add it also. Mix the flour in a bit of cold milk and add to the saucepan. But all in the hot and stir until thicken. In the end check if it sweet enough.
Now you just need to add the cream to the cooked egg, gently on top and around. To finish it put some cinnamon on top.
And that's it! now you can try it hot or cold.
